Making Chocolate Shards
Using a saucepan filled with water add a second pan to place dark chocolate. Never melt chocolate in a pan with direct heat. Do not over stir while chocolate is melting. Once chocolate is melted you take a flat edge spatula and evenly spread out chocolate over a smooth granite bench top or waxed paper not baking paper. Should before the chocolate has re-hardened take the wide end spatula and push along the chocolate and you will create chocolate curls and shards that can be used for decorating your cake and storage in the fridge for future use.
